Apple & Cheddar Tartine

A tartine is the French term for an open-faced sandwich. Start with a really good dense, chewy bread and extra sharp Vermont cheddar cheese to give the sandwich real character. Our favorite bread is cranberry-pecan bread made by a local bakery or rustic sourdough.
Ingredients
4 slices good quality bread, thickly sliced
1 large apple, thinly sliced
French Dijon mustard
Extra sharp cheddar (we love Shelburne Farms cheddar)
Directions
Preheat broiler. Toast each slice of bread in a toaster. Spread one side of each slice of bread with a thin layer of mustard. Then add a layer of apple slices and top with a thick layer of cheese. Place the slices of bread under broiler for under 1 minute or until cheese melts and is bubbly. To turn this into a heartier meal, serve alongside a soup or salad.
